Instructions
  1. Trim, peel and chop the carrots.
  2. Toss the chopped carrots into a soup pot and cover with cold water.
  3. Season with sea salt and add curry powder to your liking.
  4. Cover the pot and bring to a boil. Then lower the heat and simmer until the carrots are tender. This should take about 20 minutes.
  5. Puree the soup with a blender until the soup is smooth.
Recipe Notes

Add coconut milk if you like it creamy.
